Asparagus and Chicken Stir

Ingredients

2 - chicken breasts

1¾ lb - fresh asparagus

2 cloves - garlic

2 tablespoons - soy sauce

2 teaspoons - sugar

2 tablespoons - sesame oil

  - salt and pepper

4 teaspoons - sesame seeds

Directions

  1. Remove any skin from the chicken breasts and cut them into bite-size pieces - about 1" (2.5cm) cubed. Wash the asparagus and trim the ends, then cut on the diagonal into 2" (5cm) long pieces. Peel and finely chop the garlic.
  2. Place the soy sauce in a bowl, add the sugar and stir until the sugar dissolves. Place a heavy-bottomed frying pan (skillet) or wok on a medium heat and add the sesame oil, add the chopped garlic and fry until it turns pale brown. Add the asparagus and stir-fry for about 3-4 minutes until it is crisp-tender. Add the chicken pieces and continue to stir fry for a further 2-3 minutes until the chicken is cooked. Add the soy-sugar mixture and toss until the asparagus and chicken are well coated. Add salt and freshly ground black pepper to taste. Transfer to a serving bowl and sprinkle sesame seeds over prior to serving.
