Bacon and Avocado Toasted Sandwich

Ingredients

6 rashers (slices) - smoked bacon

4 thick slices - bread (any type you prefer)

4 tablespoons - mayonnaise

4-8 - tender lettuce leaves

1 - tomato

  - salt and pepper

1 - ripe avocado

½ - lemon

Directions

  1. Grill the bacon rashers on both sides until they are nicely browned and crisp (you can pan fry them if you wish, but they wont be as crisp). When cooked, lay them on absorbent kitchen paper to drain for a few minutes before using.
  2. Meanwhile, toast the bread until it is evenly browned. Place the slices on a cutting board and spread 1 tablespoon of mayonnaise on two of the slices, then layer those two slices with the (washed and dried) lettuce leaves. Slice the tomato and layer the slices on top of the lettuce, then sprinkle liberally with salt and freshly-ground black pepper. Place 3 rashers of bacon on top of the tomatoes.
  3. Peel the avocado and slice it about ¼" (6mm) thick. Squeeze the half-lemon into a bowl and toss the avocado slices in the lemon juice. Arrange the avocado on top of the bacon in each sandwich the add a dollop of mayonnaise. Place the remaining two slices of bread onto the sandwiches. Cut in half and serve with a glass of cider or rosé wine.
