Beef in Oyster Sauce

Ingredients

1 lb - lean beef steak

2 teaspoons - cornflour (cornstarch or wheat starch)

2 tablespoons - light soy sauce

2 teaspoons - dry sherry

½ tablespoon - corn oil

2½ fl oz - chicken stock *

1½ tablespoons - oyster sauce

1 teaspoon - cornflour (cornstarch or wheat starch)

1 teaspoon - water

Directions

  1. Cut the beef into strips about 2" (5cm) long, place in a small bowl and add 1 teaspoon of corn flour (cornstarch or wheat starch), the soy sauce and the sherry. Mix together well then allow to sand for at least 20 minutes.
  2. Heat the oil in a large frying pan until it is very hot and almost smoking, then add the beef slices and stir fry them for 1-2 minutes. Remove the from the pan with a slotted spoon and place them in a sieve (strainer) or colander to drain. Wipe the frying pan with soft kitchen tissue to remove the surplus oil then reheat it over a high heat. Add the chicken stock and oyster sauce and bring the liquid to the boil.
  3. Meanwhile, mix 1 teaspoon of corn flour with 1 teaspoon of water in a cup. When the stock is boiling, add the corn flour mixture and simmer for two minutes. Return the drained beef to the pan and mix to ensure that all the meat is thoroughly coated with the sauce. Serve hot with either Chinese Fried Rice or Chicken Chow Mein
