Ingredients

2 lb - diced chicken (or chicken breast fillets)

1 - onion

20 - 25 - coriander leaves

20 - 25 - mint leaves

1 stick - celery

2 - green chilies

2 teaspoons - lemon juice

1 tablespoon - vegetable oil

1 teaspoon - ginger garlic paste

½ teaspoon - cumin powder

½ teaspoon - garam masala (hot spice mix)

  - salt

Directions

  1. Cut the chicken into bite-size pieces about ¾" (2cm) across. Peel and finely chop the onion. Place the coriander, mint, celery, green chillies, chopped onion and lemon juice in a blender and pulse several times to create a fine paste.
  2. Heat the vegetable oil in a large frying pan and, when the oil is very hot, add the paste and sauté it until it becomes pale green in colour. Stir in the ginger garlic paste, the cumin powder and the garam masala and sauté for a few minutes until the raw masala smell disappears. Add the chicken pieces and season to taste then stir well and leave to simmer on a low heat for 30 minutes or until the chicken is tender. Garnish with fresh cream in the centre and coriander leaves and serve hot.
