Pork Patties With Sweet Chilli And Noodles

Ingredients

6 stalks - lemongrass

2 cloves - garlic

1 lb - minced pork

2 tablespoons - fish sauce

  handful - fresh coriander

  - salt and pepper

2 tablespoons - sesame oil

2 teaspoons - sugar

8 oz - fine rice noodles

8 - spring onions (a.k.a. scallions or salad onions)

  - sweet chilli dipping sauce

Directions

  1. Remove the outer layers of the lemongrass, and finely chop the bottom ⅓ of the stalks. Peel and crush (mince) the garlic and finely chop the coriander and spring onions. In a bowl, mix together the pork, garlic, lemongrass, fish sauce and half the coriander. Season with salt and freshly ground black pepper to taste.
  2. Mix well and form into 16 patties. Rub each one with sesame oil and a sprinkling of sugar, then place on a rack in a baking tray. Heat the grill (broiler) and grill the patties for 3 minutes each side until golden brown. Meanwhile cook the rice noodles following pack instructions (usually just a few minutes in boiling water). Drain the warm noodles and serve with the patties, chopped spring onions, remaining coriander and a drizzle of sweet chilli dipping sauce.
