Chicken Vermicelli Soup is probably the easiest soup you'll ever make since it takes only three minutes to cook and the ingredients are few and readily available. Having said that, it's tasty and filling and is great for a quick snack or light lunch.

Vermicelli is a spaghetti-type pasta though much smaller - diameter less than 0.06 inches (1.5 mm) whereas spaghetti has diameter between 0.06 and 0.11 inches (1.5 and 2.8 mm). Vermicelli means "little worms" in Italian. It is known as seviyen in the Indian subcontinent.

To serve 2:

4 oz dried Vermicelli
2 chicken stock cubes
  salt
1¾ pints water

How to Cook Chicken Vermicelli

  1. Boil the water in a kettle then transfer it to a saucepan. Dissolve the stock cubes in the water and bring it back to the boil. Add the Vermicelli and salt to taste and stir occasionally during the 3 minutes cooking. Serve in soup bowls for a quick and filling snack or light meal.
