Easy Cook Chicken

This is the easiest way to cook a whole chicken. You will need either large pan (big enough to contain the whole chicken) or a large, flameproof casserole dish with a cover. For guidance, a chicken of about 3lb (1.5kg) will comfortably feed four people. Remember that many oven-ready chickens contain bags of 'spare parts'. Make sure you remove any such contents from inside the chicken first. I always wash my chickens, inside and out, in cold running water before cooking.

To serve 6:

1 x 3 lb oven-ready chicken
1 tablespoon butter
4 tablespoons corn oil
1 large glass water
½ chicken stock cube
  salt and pepper
1 teaspoon dried thyme
1 sprig parsley

How to Cook Easy Cook Chicken

  1. Put the oil and the butter into a heavy casserole dish or large pan and heat until the butter melts. Keeping the heat on high, place the chicken in the pan (dish) and quickly brown it on all sides (this takes about 5 or 6 minutes).
  2. With the chicken sitting breast upwards, pour a large glass or water into the pan and bring to the boil. Reduce the heat so that the water is gently bubbling then crumble in half a chicken stock cube. Add the thyme, parsley and salt and pepper to taste and cover with a lid. Cook for 45 minutes, checking from time-to-time that there is still sufficient water (add more if necessary).
  3. After cooking, the chicken is immediately ready for eating. You can spoon some of the liquid from the pan as a 'sauce' to pour over your chicken.
GRAHAM'S HOT TIP:
To add a delicate extra flavour to your chicken (and sauce) you can chop a stick of celery into the pan before covering. Also, if there is a bag of 'spare parts' (giblets) inside the chicken, you can add these to the pan too.
