To serve 6:

4 lettuce leaves
6 spring onions (a.k.a. scallions or salad onions)
1 lb frozen peas
½ pint water
1 teaspoon lemon juice
1 teaspoon sugar
2 oz butter

How to Cook French Style Peas

  1. Shred the lettuce leaves and slice the spring onions. Put all the ingredients except the butter into a saucepan. Bring to the boil, then cover and simmer gently for 5-6 minutes. Drain well using a colander and place in a serving dish. Cut or break the butter into small pieces and place on top to melt into the peas. Serve immediately.
GRAHAM'S HOT TIP:
Any peas that are uneaten can be reheated the following day by placing them in gently boiling water for just 2 minutes.
