French Toast in a Cup is one of our favourites, particularly since you can prepare it from start to finish in just 5 minutes. As the name suggests, it's French Toast in a cup (duh!), made in your microwave and topped off with a generous drizzle of sticky Maple syrup. Calories? God knows - who's counting?

To serve 2:

3 - 4 white bread
2 teaspoons butter
1 large egg
3 tablespoons milk
  cinnamon
  maple syrup

How to Cook French Toast in a Cup

  1. First you need white bread like pain de mie (sandwich bread or pullman loaf) or, if you like a little crunch, go for a crusty baguette. About one or two slices of bread per cup cut into ¾" (2cm) cubes.
  2. Rub a pat of butter around the inside of two cups to coat them. Place the cubed bread into the cups (one big cup works fine if you are feeling hungry!). Gently press it down a bit but don't compact it because you need the liquid to be able to work it's way in.
  3. Crack the egg into a small bowl or ramekin and add the milk. Sprinkle with cinnamon and mix together well with a fork. Pour the mixture over the bread into the cups and give it a minute to soak into the bread.
  4. Place the cups in the microwave. Start with one minute, then add ten seconds at a time until everything is cooked to your liking (no runny egg). In my microwave that';s 1 minute, 20 seconds but yours may be a little different.
  5. Pour as much syrup over the top as you like and repeat every day!!!
GRAHAM'S HOT TIP:
If you like your French Toast sweet or tasting of vanilla, add a single drop of vanilla extract to the egg and milk mixture.
