Never underestimate a good sausage! If you have a reliable butcher, try out all his different sausages and stick with the ones that give you most pleasure. Commercial sausages? - Phaaa! - any idea what they put into them? At least with an independent butcher you'll know that the contents are not just chemical!!

1 or more pork or beef sausages
1 tablespoon plain flour (all purpose flour)
  salt and pepper

How to Cook Fried Sausages

  1. If your sausages are still joined together, cut the skin between them to separate them. Pearce each sausage with a fork six or seven times. This enables the fat in the sausage to escape and helps avoid them bursting during cooking. Place the flour onto a plate and season with salt and freshly-ground pepper to taste. Roll each sausage into the seasoned flour so that they are lightly coated all over. Place in a non-stick frying pan (or a frying pan with a little oil) and cook on medium heat for about 10 minutes, turning regularly until they are golden brown all over.
GRAHAM'S HOT TIP:
Always cook sausages slowly and thoroughly, otherwise it is possible for them to look cooked from the outside but still be pink and uncooked in the middle. Gentle cooking also helps the appearance since you are more likely to finish up with a golden brown sausage rather than a blackened and charred lump of meat!
