This recipe for light orange beef and broccoli is so simple and has just 250 calories per serving! Absolutely packed with flavour.

Serves 4:

1 Orange
2 tablespoons Soy Sauce
5 tablespoons Beef stock
5 tablespoon Orange marmalade
2 tablespoons Corn Starch
1 lb Flank steak or skirt
2 cloves Garlic
1 head Broccoli

How to Cook Orange Beef and Broccoli

  1. Zest the orange. Add 1 tablespoon of the zest to a mixing bowl and set the rest aside. Squeeze the juice from the orange and add to the zest. Add the soy sauce, the beef stock, and the marmalade. Mix well, then add the cornstarch and whick until it is dissolved.
  2. Wash the broccoli and cut into bite-size florets. Boil the broccoli for just a few minutes, until tender crisp. The broccoli will cook a little more once you add it in to the sauce, so make sure not to boil it for too long.
  3. Thinly slice the steak and peel and mince the garlic. Heat the oil in a skillet over high heat. Add the steak and garlic, draining off any extra fat after a few minutes. Flip the pieces until each piece of meat is browned.
  4. Add the sauce to the pan and stir for one minute until the sauce starts to thicken. Remove from the heat and stir in the broccoli. Serve over rice and garnish with the remaining orange zest (or chopped scallions if you prefer).
