Potato Croquettes take a little longer to create than other potato dishes but are ideal if you are entertaining friends or relatives.

NOTE: If you have left over mashed potatoes, just reheat them in the microwave then follow this recipe as if you'd just made them!

To serve 6:

6 medium-sized potatoes
1 oz butter
up to ½ cup milk
2 eggs
  salt and pepper
  ready made breadcrumbs
1 clove garlic
  oil for frying

How to Cook Potato Croquettes

  1. Peel the potatoes and follow the recipe for creamed potatoes. Beat the eggs and add about ¾ of the mixture to the potatoes. Season liberally with salt and freshly-ground pepper then stir into a smooth paste. Form the potato into sausage-shaped portions about 1 ½" (4cm) long and about ¾" (2cm) in diameter. Brush these with the remaining egg mixture and roll them in a saucer of breadcrumbs to coat the outside.
  2. Crush (mince) the garlic, place it in a frying pan with about ½" (1cm) of oil and fry the croquettes until they are crisp and golden-brown. Serve hot.
GRAHAM'S HOT TIP:
The garlic is only intended to impart a delicate flavour, so cut the clove down the middle long-ways and remove the central 'germ' (the thin stem that looks like a pale green or translucent vein).
