To serve 4:

4 medium-sized carrots
1½ servings Lemon Dressing

How to Cook Raw Carrot Salad

  1. Peel the carrots and grate (shred) them finely. Place them in a mixing bowl with a portion of Lemon Dressing. Mix well, then fill a small cup with the mix and press gently using the cup as a mould. Turn over onto a plate and repeat to make a second helping. Watch as the carrot holds its shape, looking and tasting quite delicious.
GRAHAM'S HOT TIP:
If you want to add a slightly sweet taste, mix 1 tablespoon of sultanas with the grated carrot.
