Red Cabbage with Apples is one of those lovely winter recipes that goes brilliantly with almost any dish you care to mention. It takes minutes to prepare, then two hours of gentle cooking, during which you need do nothing except have a glass of wine and relax!

To serve 8:

2 oz butter
1 onion
2 dessert apples
2¼ lb red cabbage
4 oz sultanas or raisins
7 fl oz sherry vinegar (or red wine vinegar)
  salt and pepper

How to Cook Red Cabbage with Apples

  1. Peel and finely slice the onion. Peel, core and slice the apples and finely slice the red cabbage. Melt the butter in a pan or casserole over a medium heat (because of the addition of vinegar, do not use any aluminium pans for this recipe). Gently fry the onion in the butter for 3 minutes, then add the apple and cabbage. Cook for 5-6 minutes, until softened a little, then add the sherry vinegar (or red wine vinegar) and the sultanas.
  2. Cover the casserole (pan) with a lid and cook very gently for 1 hour. Season to taste with salt and freshly ground black pepper and replace the lid. Continue to cook until the cabbage is tender and all the liquid has evaporated (about another 1 hour).

Red Cabbage with Apples will keep for several days, covered, in the fridge. Simply heat it up again when ready to serve.
