Red Cabbage

Ready in 55 mins

Recipe by Graham

Red Cabbage is a close relative to the everyday white (or green) cabbage and is quite delicious when cooked with apple. This recipe makes a great vegetable mixture to eat with something that is otherwise very simple like frankfurter sausages, for example.

To serve 4:

1 small to medium red cabbage (about 1lb - 450g)
1 medium onion
1 cooking apple
1 clove garlic
1 tablespoon vinegar
1 tablespoon butter
1 teaspoon brown sugar
1 teaspoon caraway seeds
  salt and pepper
4 tablespoons water

How to Cook Red Cabbage

  1. Shred or chop the cabbage into small strips. Peel and chop the onion. Peel, core, and chop the apple and crush (mince) the garlic. Place all these in a large saucepan and add the vinegar, butter, sugar, caraway seed and salt and freshly-ground pepper to taste.
  2. Place over a low heat, cover and cook for 5 minutes, shaking the pan occasionally. Add the water, bring to the boil and then simmer gently for 40 minutes. Serve hot.
GRAHAM'S HOT TIP:
When cooked, no need to drain or strain - just serve it straight to the plate.
