This recipe for Rich Apple Chutney has a tangy, but sweet flavour that is perfect with cheeses such as Cheddar, Cheshire or white Stilton. Easy to make and keeps for ages.

To serve 4 - 6:

8 oz onions
2 lb apples
4 oz sultanas, raisins or chopped dates (or a combo of all 3)
½ oz ground coriander
½ oz paprika
½ oz mixed spice
½ oz salt
12 oz granulated sugar
1¾ cups malt vinegar

How to Cook Rich Apple Chutney

  1. Peel and chop the onions and peel, core and chop the apples. Place all the ingredients into a large pan. Slowly bring the ingredients to the boil and stir until the sugar has dissolved.
  2. Simmer gently for 1½ - 2 hours, stirring from time to time to stop the chutney sticking to the pan.
  3. The finished chutney should have a nice thick consistency. To test when the chutney is ready, pull a wooden spoon across the base of the pan so that it leaves a channel behind. If the channel does not immediately fill with liquid, the chutney is ready.
  4. Spoon the chutney into sterilised Kilner jars, seal and cool.

Rich Apple Chutney is best if stored in a cool, dark cupboard for two to three months before eating
