Sausage and Cheese Toastie

Toasted sandwiches provide a quick and easy method of producing a light meal or a snack. The base often includes cheese which, for any melted cheese recipe, should be a hard cheese like Cheshire, Cheddar, Lancashire or similar.

As far as I am concerned, very little can compare with the delicious taste when sausage and cheese are combined. Whether using cold left-over sausages or whether they are reheated as in this recipe, the combination of flavours is unbeatable.

To serve 4:

4 oz Cheddar cheese
3 - 4 cooked sausages
  Marmite (optional)
4 slices bread

PLEASE NOTE: This recipe calls for the GRILLING or BROILING of food. In most countries of the world, the term "grilling" refers to heat coming from above the food source. Significantly, in North America, it signifies heat from below the food (such as barbecuing). In the United States and Canada, when the heat source for grilling comes from above, grilling is termed broiling, and the pan that holds the food is usually called a broiler pan.


How to Cook Sausage and Cheese Toastie

  1. Toast the bread then (optionally) spread it with a little Marmite. grate (shred) or crumble the cheese and spread it evenly over the toast. Place this under a hot grill (broiler) until the cheese just begins to melt. Slice the cooked sausages either lengthways (as I prefer) or in round slices (as shown above) and place on top of each toastie. Return to the grill for a few more minutes until the cheese begins to bubble.
  2. Alterntively (as shown on the right) you can crete "mini-toasties" for the kids by cutting a baguette and putting a slice of sausage on each one. Either way, a great snack for children and adults alike!
GRAHAM'S HOT TIP:
Marmite is a strange British yeast extract that you either love or hate. If you hate it or can't get it, create the toasties without it, then serve with either a little brown sauce or thick spicy barbecue sauce
