Changing from Corn Oil to Olive Oil gives a fresh summery taste to this dressing. Perfect for mixed salads. Many timesI have heard people saying how complicated it must be to make a salad dressing (so they go and buy ready-made, over-priced rubbish!). But how simple is this recipe? It quite literally takes 2 - 3 minutes from start to finish and you can tailor the ingredients to suit your personal tastes (more vinegar gives a sharper taste. More oil makes it more mellow)

  salt and freshly-ground pepper
1 tablespoon red wine vinegar
1 level teaspoon Dijon Mustard
3 - 4 tablespoons olive oil

How to Cook Summer Oil Dressing

  1. Place a little salt and freshly-ground pepper into a large bowl. Add the red wine vinegar and stir until the salt has dissolved. Add the mustard and stir again until the mustard has mixed thoroughly with the vinegar. Now add the olive oil and mix again until you achieve a consistent dressing.
  2. Eh Voila! This simple Summer Dressing can be used in many meals as we shall see on this web site. For a simple salad, place the lettuce leaves into a bowl and gently, but thoroughly, toss them into the dressing until they are completely coated.
GRAHAM'S HOT TIP:
To give this dressing an extra tang, use Dijon mustard with peppercorns. This is available from most good food stores.
