Tasty Pasta Salad is a low-fat, zesty salad, perfect for a summer lunch (or lunchbox). You can vary this basic recipe by adding other ingredients like chunks of ham, salami or leftover cooked chicken. Or maybe flake in hot-smoked salmon or smoked mackerel. Or add sundried tomatoes, olives or roasted peppers. The recipe is as versatile as your imagination!

To serve 4:

9 oz pasta shapes
5 oz frozen peas
  handful parsley
10 - 15 stalks chives
1 lemon
  salt and pepper
2 tablespoons olive oil

How to Cook Tasty Pasta Salad

  1. Cook the pasta according to the pack (usually 3-4 minutes in boiling water). Add the peas for the final 2 minutes of cooking time. Drain and rinse with cold water to cool, then drain again.
  2. Chop the parsley and snip the chives into a large mixing bowl. Add the zest and the juice of the lemon to the bowl, then add the olive oil and the cooled pasta and peas, with plenty of salt and freshly ground black pepper and mix well. Cover and chill before serving.
GRAHAM'S HOT TIP:
Add a tablespoon of olive oil to the water when cooking the pasta. It stops them sticking together. Also, if you keep your Tasty Pasta Salad in the fridge, by day 3 you'll need to stir in a little olive oil to loosen the pasta.
