Tasty Turkey Portions

Ready in 17 mins

Recipe by Graham

The only problem with turkey is its size! If you are alone or with just a small family, a whole turkey can be a daunting affair. Prepared turkey portions are the obvious answer and, since turkey is a very delicate meat that can sometimes dry out if overcooked, this easy Tasty Turkey Portions recipe ensures that all the juices are retained, leaving moist, succulent meat.

To serve 2:

2 small-sized turkey portions of your choice
1 tablespoon corn oil
  salt and pepper
4 fl oz white wine

How to Cook Tasty Turkey Portions

  1. Remove any turkey skin and rub salt and freshly ground pepper all over the portions. Heat the oil in a frying pan until it is quite hot then add the turkey pieces and quickly fry on all sides to seal the juices. Add the wine to the pan and bring to boiling. Reduce the heat a little so that the liquid simmers quickly (low boil). Cook, turning the turkey occasionally, until all the wine is absorbed (usually about 12-15 minutes). Serve with your choice of vegetables for a fine, tender and tasty turkey supper.
GRAHAM'S HOT TIP:
Don't be alarmed if the turkey portions become lightly browned on the outside; the meat on the inside remains white and the taste will be superb.
