Tomato and Mozzarella Salad

Mozzarella is a soft Italian cheese that is usually bought in sealed packets of about 125g (nearly 5 oz). The mix of tomato and Mozzarella makes a delicious salad accompaniment or can be served on its own as a fresh summer starter course.

To serve 4:

3 - 4 large firm tomatoes
2 small shallots (or ½ of a small onion)
4 oz Mozzarella cheese
½ cup Summer Oil dressing
sprinkle of salt
a few leaves of fresh basil

How to Cook Tomato and Mozzarella Salad

  1. Slice the tomatoes and arrange on a plate. Slice the Mozzarella and place the slices between the tomatoes so that the arrangement alternates tomato-cheese-tomato etc. Salt the dish to taste. Peel and finely chop the shallot then sprinkle it over the tomato and Mozzarella. Pour about half a cup of Summer Oil Dressing over the dish and sprinkle with fresh basil leaves to create a summer platter that is equally delicious on its own, with a cold meats, or as an accompaniment to a barbeque or with a nice steak.

Don't be mean with the basil - it improves both the appearance and the taste.
