Pasta, Sausage and Bacon Salad

Pasta, Sausage and Bacon Salad is inspired by my low-fat Tasty Pasta Salad, with "added extras" to suit hungry mouths or a young family. I find that pasta dishes are always appropriate for get togethers because everyone loves them and they are usually great to prepare ahead of time. I recently came up with this recipe for Sausage and Bacon Pasta and it was immediately a hit. What I love most is that you can whip it up and serve it in the skillet immediately or throw it in a casserole dish and reheat to serve to a crowd, or let it chill and eat it cold... very versatile.

To serve 4:

8 oz pasta shapes
5 oz frozen peas
  handful parsley
10 - 15 stems chives
1 lemon
  salt and pepper
2 tablespoons olive oil
2 pork sausages
4 rashers (slices) smoked bacon

How to Cook Pasta, Sausage and Bacon Salad

  1. Cook the pasta according to the pack (usually 3-4 minutes in boiling water). Add the peas for the final 2 minutes of cooking time. Drain and rinse with cold water to cool, then drain again.
  2. Chop the parsley and snip the chives into a large mixing bowl. Add the zest and the juice of the lemon to the bowl, then add the olive oil and the cooled pasta and peas, with plenty of salt and freshly ground black pepper and mix well. Cover and chill.
  3. Grill the sausages and bacon (till crisp) and allow them to cool. When you are ready to serve, break the bacon into small pieces and thinly slice the sausages. Add the sausages to the pasta mix and sprinkle the bacon over the top.
GRAHAM'S HOT TIP:
Add a tablespoon of olive oil to the water when cooking the pasta. It stops them sticking together. Also, if you keep the pasta in the fridge, by day 3 you'll need to stir in a little olive oil to loosen the pasta (always add the bacon just before serving)
