Graham's Meatloaf

ingredients
2 slices - white bread

2lb 4oz - minced beef (ground beef)

1 large - red onion

2 tablespoons - tomato ketchup

2 tablespoons - brown sauce

1 tablespoon - Worcestershire sauce

1 - egg

2½ oz - grated Parmesan cheese

1 tablespoon - oregano

1 tablespoon - parsley (chopped)

1 tablespoon - milk

  - sea salt and freshly-ground black pepper

3 - 4 rashers (slices) - back bacon (side bacon)

  1. Either crumble the bread between your fingers, or give it a few pulses in a food processor to make breadcrumbs. Peel and chop the onion. Finely chop the oregano and parsley. Mix ALL the ingredients (except the bacon) in a large bowl until the mixture lifts away easily from the sides of the bowl and forms a ball.
  2. Form the mixture into an oblong shape and place in a loaf tin. Lay the strips of bacon over the top and bake in a preheated moderate oven (Mk 4 - 350ºF - 180ºC) for 50-60 minutes until a skewer inserted into the centre comes out clean.
  3. Serve hot with Stir Fried carrots with Orange and Irish Style Champ or serve cold with Potato and Egg Salad.
