How to Cook Graham's Meatloaf
- Either crumble the bread between your fingers, or give it a few pulses in a food processor to make breadcrumbs. Peel and chop the onion. Finely chop the oregano and parsley. Mix ALL the ingredients (except the bacon) in a large bowl until the mixture lifts away easily from the sides of the bowl and forms a ball.
- Form the mixture into an oblong shape and place in a loaf tin. Lay the strips of bacon over the top and bake in a preheated moderate oven (Mk 4 - 350ºF - 180ºC) for 50-60 minutes until a skewer inserted into the centre comes out clean.
- Serve hot with Stir Fried carrots with Orange and Irish Style Champ or serve cold with Potato and Egg Salad.
GRAHAM'S HOT TIP:
If you don't have a loaf tin, don't worry because Meatloaf holds its shape well. Just form the mixture into the shape of a house brick, place it on a baking sheet, and lay the bacon over the top.

August 04 2014YUMMY!!! Made this dish for company the other night and WOW! It was a BIG hit! My 8 yr old had 2 huge pieces and my hubby even had leftovers for breakfast the next morning while we were all still sleeping! I used seasoned breadcrumbs, threw in some garlic powder and parsley flakes and doubled the ketchup mixture. Seasoned breadcrumbs are a must for this recipe; Would be very bland without them. April 11 2014I know my meatloafs and this is pretty good! I made a few 'changes' based on my experience... I sauted the onion, used seasoned bread crumbs, doubled the ketchup mixture and replaced the brown sauce with a couple of teaspoons of mustard. Also, I line the pan with foil for easy clean up. April 28 2013Being British, I've no way of comparing this to the way Americans make it, but my sister-in-law is from California, and she loved it, so I guess it works! I confess that I prefer a nice Scotch Pie or something similar. I guess it's just a question of different cultures. Nothing wrong with it, but just doesn't light my fire. pammy (7 reviews) |
