Idiyappam forms part of a main course served along with chicken or vegetable curries. Idiyappam is also known as "String Hoppers" and is a culinary specialty in the Kerala and Tamilnadu regions of India.

to serve 4:
1¼ pint
boiling water
14 oz
rice flour
 
salt
2½ oz
grated (shredded) coconut

 

How to Cook Idiyappam

  1. To the boiling water add rice flour with a couple of good pinches of salt and knead it to form smooth dough. Use a few drops of oil to grease microwave-safe plates and press the dough, a little at a time, through a noodle presser onto the plates. Sprinkle some grated coconut over the "noodles" and cook in a microwave oven for 2-3 minutes on full power. Serve hot with sweetened coconut milk, fish, Chicken or vegetable curries.
