When I don't have much time I often make Chicken with Parmesan and Basil because they're quick to prepare and make a really tasty dish. The advantage of this recipe is that it keeps the chicken soft. You can add chopped mushrooms to the mix if you feel like it.

to serve 4:
2 oz
grated parmesan
4
chicken breasts
4 oz
Philadelphia cheese (or fromage frais)
16 leaves
basil
8 leaves
flat parsley
½ pint
double cream (heavy cream)
1 oz
butter
1 tablespoon
sunflower or olive oil

 

How to Cook Chicken with Parmesan and Basil

  1. Cut through the chicken breasts horizontally, but do not cut completely in two. (This process is known as "butterfly"). Open the breast on a flat surface and completely flatten with the palm of your hand.
  2. In a bowl mix the cream cheese, chopped basil, chopped parsley and parmesan. Spread this mixture over the chicken then close and tie with food twine.
  3. In a skillet, melt the butter with the oil over medium heat. Lightly season the chicken with salt and freshly ground pepper then cook, turning frequently, for about 20 minutes. Reduce the heat and add the cream. Cook for a further 5 minutes and serve hot with fresh vegetables.


Graham GRAHAM'S HOT TIP:
Be sure not to let the liquid boil after you have added the crem, otherwise the cream will separate.
