How to Cook Buttered Cucumber
- Either peel the cucumber or just wash it well and then cut it long-ways down the middle. Scoop out the seeds using a teaspoon then cut the flesh into slices about 1" (2.5cm) thick. Bring a large pan of water to the boil and add the vinegar, thr salt and the sliced cucumber. Boil gently for 10 minutes then drain well in a colander.
- While the cucumber is cooking, squeeze the juice from the lemon. Place the cooked cucumber in a serving dish then add the butter and lemon juice. Sprinkle the chopped parsley over the top.

Raw cucumber can cause some people digestion problems. Not so with cooked cucumber; it is easily tolerated by everyone.
Reviews of Buttered Cucumber
![]() I'm not usually a big fan of cucumber, but this is really good. I followed the directions exactly and it worked out just fine. This recipe will be used again and again this summer! nancy (4 reviews) |
![]() Simple and delicious. I was a bit leary of cooking cucumbers, but it turned out well. I used the seedless "English" cucumbers. They cook up better and have less moisture. I have actually made this several times, but never reviewed until now. It's quick and easy and works every time roseT (6 reviews) |
