Sausage, Egg and Cheese Breakfast is no wimpy fast food McBurger breakfast sandwich approved by the calorie police. This is a proper *man's* breakfast all done in one pan, and perfect for that special Sunday morning when you look forward to a relaxed day of doing nothing...!

Sausage, Egg and Cheese Breakfast tastes best when you use an assortment of sausages... Cumberland, red pepper Italian style, chicken, Polish style, chorizo, German sausage, hot sausage, sweet sausage - whatever floats your boat! You can also use whatever cheeses you prefer. Cheddar and mozzarella work well together but, again, do your own thing here. There are no hard and fast rules to this one!

How to Cook Sausage, Egg and Cheese Breakfast

  1. Core, deseed and roughly chop or slice the green pepper. Peel and dice the onion and peel and crush (mince) the garlic. Melt the fat in a large frying pan over medium heat and add the peppers, onion and garlic. Allow them to soften gently for about 5-6 minutes. Meanwhile cut the sausages into about ½" (1cm) thick slices. When the onion and pepper have softened a little, add the sausage slices to the pan and, to help them brown, turn up the heat and press the sausage slices gently so they are in contact with the base of the pan.
  2. Leave the sausages to cook for 3-4 minutes, meanwhile grate (shred) the cheeses and beat two eggs. Flip the sausage mixture over, pour the beaten egg over the whole mixture and season generously with salt and freshly ground black pepper. Again, press the mixture down gently so it's in good contact with the pan. Sprinkle the grated (shredded) cheese over the mixture then cover the pan and reduce to medium heat.
  3. While the cheese is melting, split the English muffins in two and toast them (you can do this at any stage of the cooking process). When the cheese has melted, use a fish slice to lift a portion of the sausage-egg-cheese mixture from the pan onto the bottom half of each muffin. Place the other half of the muffin on top and apply the whole McBreakfast liberally to mouth!


Graham GRAHAM'S HOT TIP:
You can use oil in the frying pan if you wish, but the taste of almost all fried foods is hugely enhanced by using duck of goose fat.

I grew up on stuff like this that my grandma used to make. ever did me any harm! We also make it with bacon or polish sausage. My favorite is when it is made with polish sausage. Really great recipe.

These are very delicious although I did make one little alteration. I used bacon as well as the sausage!! Simply delicious! I LOVE eggs for breakfast especially on a Sunday! It's a great way to start the day and when you add in some sausage and cheese....well it's downright naughty! So I'll certainly be making them again!
