Bacon and Avocado Toasted Sandwich is a "deviation" from the standard BLT. Adding avocado takes it up a level and a Bacon and Avocado Toasted Sandwich makes a great snack ot light lunch at any time.

6 rashers (slices)
smoked bacon
4 thick slices
bread (any type you prefer)
4 tablespoons
tender lettuce leaves
salt and pepper

PLEASE NOTE: This recipe calls for the GRILLING or BROILING of food. In most countries of the world, the term "grilling" refers to heat coming from above the food source. How to Cook Bacon and Avocado Toasted Sandwich

  1. Grill the bacon rashers on both sides until they are nicely browned and crisp (you can pan fry them if you wish, but they wont be as crisp). When cooked, lay them on absorbent kitchen paper to drain for a few minutes before using.
  2. Meanwhile, toast the bread until it is evenly browned. Place the slices on a cutting board and spread 1 tablespoon of mayonnaise on two of the slices, then layer those two slices with the (washed and dried) lettuce leaves. Slice the tomato and layer the slices on top of the lettuce, then sprinkle liberally with salt and freshly-ground black pepper. Place 3 rashers of bacon on top of the tomatoes.
  3. Peel the avocado and slice it about ¼" (6mm) thick. Squeeze the half-lemon into a bowl and toss the avocado slices in the lemon juice. Arrange the avocado on top of the bacon in each sandwich the add a dollop of mayonnaise. Place the remaining two slices of bread onto the sandwiches. Cut in half and serve with a glass of cider or rosé wine.

Do you struggle to get the stone out of a halved avocado? Don't!! Take a sharp knife and hit the stone with the knife blade (watch your fingers) just enough for the blade to stick. Then gently turn the knife and the stone will twist and come loose.

Oh how I love avocado!! And you’re right - a squeeze of lemon (or lime) puts it absolutely over the top - INSANELY good! Especially with a sprinkle of sea salt and grind of pepper. These paired with bacon on toast are a dream come true
