leeks
2 oz

6 rashers (slices)

How to Cook Leek and Bacon Platter

  1. Trim, wash and slice the leaks into ½" (1cm) slices. Remove any rind from the bacon and chop it into small pieces. Melt the butter in a frying pan, add the bacon and the leeks along with a several generous twists of fresh pepper. Cover the pan and, stirring occasionally, cook on medium heat for about 15 minutes (or until the leeks are tender). Serve hot either on its own or with white sauce if preferred.

I first came across this recipe in a Sainsbury's cook book about 35 years ago! It was delicious then and it's still delicious today. I've never tried to vary it - why change perfection??? It really is a delicious side dish to poultry, fish, or virtually any "fry-up". I've never yet seen any left on the plate!

Oh jeez, that is to die for! You can eat this with ANYTHING! Honest, it is soooo good and tasty. The saltiness of the bacon works just great with the leeks and we've already had it with chicken with sausages, with scrambled eggs. It's endless! Love it.
