How to Cook Okra Bhaji
- Peel and finely chop the onion. Slit the chili lengthways. Cut the okra either across or into lengths. Peel and deseed the tomatoes and chop the flesh into small cubes.
- Heat the oil in a large frying pan (skillet), add the cumin seeds, turmeric, onion and chili and cook gently until the onion is transparent. Add the okra and sauté for 5-7 minutes until just tender. Add the sugar, tomatoes and lemon juice and simmer for 3-5 minutes. Season to taste with salt and freshly ground pepper.

Serve hot as a starter with warm pita bread... delicious!
