Onion, Tomato & Cucumber Raita is a quickly-made accompaniment for all kinds of Indian Biryani. Since the main ingredient is yogurt Raita works extremely well with any spicy Indian recipe or simply use it as a delicious dip with raw vegetables.

to serve 6:
1¼ pint
natural yoghurt
1 medium
tomato
1 small
onion
1 small
cucumber
8 - 10
coriander leaves
 
salt and pepper
 
mustard seeds
1 teaspoon
vegetable oil

 

How to Cook Onion, Tomato & Cucumber Raita

  1. Deseed the tomato and chop the flesh into small pieces. Peel the onion and cucumber and chop finely. Chop the coriander leaves. Mix the yogurt, onions and tomatoes, coriander leaves and cucumber then season with salt and freshly ground black pepper to taste. Season the mustard seeds in oil for 5 minutes then add to the mixture. Serve with Indian Biryani and breads.
