2 lb
fresh spinach
salt and pepper
2 tablespoons
crême fraîche
How to Cook Spinach
- Cut away the thick stalks leaving just the tender spinach leaves. Wash well and allow to drain. Add slightly salted water to a large saucepan (about 15fl oz - 450ml - ¾pt per 8oz (225g) of spinach) and bring to the boil. Add the spinach and cook for 4-5 minutes.
- Drain the spinach into a colander and press gently to remove excess water. Add a few twists of freshly-ground pepper and then the cream. Replace the spinach in the pan and stir in the cream until it has totally dissolved. Drain again and serve hot (sprinkled with crunchy croutons if you wish!).
GRAHAM'S HOT TIP:
When buying spinach, choose young, tender leaves with a clear green colour.
