Roast Sweet Potato Wedges are delicious with a hot roast dinners like Roasted Loin of Pork or Rare Roast Beef and Yorkshire Pudding or the beautiful Lamb Shanks in Deep Rich Gravy. In Europe, sweet potatoes are not as traditional as they are in North America, but we're getting the hang of them slowly, and this is one simple recipe that is sure to please.

How to Cook Roast Sweet Potato Wedges

  1. Scrub the potatoes and cut lengthwise into wedges. Melt the butter in a large saucepan then remove the pan from the heat and stir in the ground cinnamon. Toss the potato wedges in the butter to coat them completely then season with 2 teaspoons of salt and 1 teaspoon of freshly-ground black pepper.
  2. Spread the potatoes in an even layer on a baking sheet and roast in a preheated moderately hot oven (Mk 6 - 400ºF - 200ºC) for 25-30 minutes until golden and tender, turning wedges after the first 15 minutes. Serve hot.


Graham GRAHAM'S HOT TIP:
While the recipe calls for 4 potatoes for 4 people, you should, of course, judge by the size of the potatoes. For four people, as part of a roast dinner, you'll want between 1lb and 1lb 5oz (roughly 500g-600g).

Really good! I cooked them a little longer for the crunch I love. At 30 minutes, they were cooked but not crispy so do need more than 30 minutes (I would have left them in even longer but the burgers were done!!) Yummy!
