Creamy Potato Bake is a marvellous way to serve really soft and creamy potato slices. What's better is that you can make this recipe up to a day ahead then cover and keep in the fridge. To reheat, just preheat your oven to moderate (Mk 3 - 325ºF - 170ºC), cover the potatoes with foil and bake for 20 minutes or until heated right through.

potatoes

single cream (half-and-half)

How to Cook Creamy Potato Bake

  1. Peel and thinly slice the potatoes and leave to stand in water for a few minutes to remove any excess starch. Peel, halve and thinly slice the onions. Roughly chop the bacon rashers (slices) and grate (shred) the cheese. Grease a 2.5 litre (4 pint) ovenproof dish with a little butter.
  2. Heat the cream and milk together in a pan over low heat until heated right through (do not allow to boil). Arrange potato slices to cover the base of the greased oven proof dish dish and sprinkle with about half the onion. Season with salt and pepper to taste and pour over about half the milk and cream mixture. Continue layering with the remaining potato slices, onion, salt and pepper and cream mixture.
  3. Cover the dish with foil and place on a baking tray in a preheated moderate oven (Mk 3 - 325ºF - 170ºC) for about 1 hour or until the potato is tender. Sprinkle the pieces of bacon over the potato bake then sprinkle with the grated cheese. Bake, uncovered, for a further 25-30 minutes or until golden brown and the potato is very tender.
  4. Before serving, set aside for about 10 minutes to cool a little, since the inside will be extremely hot! Serve with Pork Chops or as part of a Roast Pork Dinner.


Graham GRAHAM'S HOT TIP:
Creamy Potato Bake goes well with poultry, too, but if you want to use it in a meal with beef or lamb, I suggest you miss out the bacon.

Absolutely delicious just the way it is. The second time I made it, I did add one minced garlic clove to the stove top cooking stage; before baking, I then layered half of it in the roasting pan, added shredded gruyere cheese and topped with the rest before placing in oven. Yummy - so creamy and delicious! This recipe is the ultimate comfort dish! I am asked to make this at least once a week. It's a real crowd pleaser!

I've renamed this "my magic mix" because the whole family just love it (with ANYTHING!). The blend of potato, cream, onions, bacon and cheese just blows their minds and they become putty in my hands!! Keeper"
